Carbonated Fizzy Fruit
Ten years ago, neurobiologist Galen Kaufman accidentally carbonated fresh fruit by storing it with dry ice. Now just like when those two guys bumped into each other carrying peanut butter and chocolate and created peanut butter cups (what do you mean that was just a commercial?), it turned out to be a serendipitous mishap. Say hello to Fizzy Fruit.
Fizzy Fruit is not just carbonated juice, the entire flesh of the fruit tastes fizzy. Kaufman, along with partners at Oregon State University's Food Innovation Center, hope their product will get people to eat more fruits and vegetables and will be marketing to malls and school lunch programs. So far the only Fizzy Fruit stand is in the Mall 205 in Portland, Oregon, but Fizzy Fruit has plans to carbonate the whole world. I am planning an all soda diet for 2005.
